Jump-start Oatmeal

Serves 4

Ingredients
1 1/3 cups water
1 1/3 cups milk
2 teaspoons cinnamon
1 teaspoon ground ginger
1 tablespoon honey
1 1/3 cups oatmeal
2 cups frozen mango, strawberries, raspberries
¾ cup walnuts
¾ cup sunflower seeds

Directions
1. Put the milk and water into a pot and bring to a boil over high heat.
2. Add the cinnamon, ginger, honey, oats and frozen fruit to the boiling liquid. Stir, cover and reduce heat to medium low.
3. Cook for 5 minutes, until liquid is absorbed, stirring occasionally to make sure nothing is burning on the bottom of the pot.
4. Remove from heat and stir in walnuts and sunflower seeds. Serve immediately.

In this case, the walnuts and sunflower seeds provide both healthy fats and additional protein to make this breakfast last for several hours. The cinnamon and ginger serve to warm you up on cold days. Use whatever frozen fruit your family likes, but note that blueberries can change to color of the oatmeal to a weird blue.

Maple Fruit Compote with Honey-Ginger Toasted Nuts

8 servings

Compote:
2-3 apples
2-3 peaches or pears
1/3 cup water
2 tablespoons maple syrup
1/2 cup raisins
Juice of 1 lemon
1 teaspoon cinnamon

Nut topping:
1 cup walnuts, or nuts of your choice
1/2 teaspoon fresh ginger, minced
2 tablespoons honey

Directions
1. Wash, core and chop fruit into slices or chunks.
2. Place in a large saucepan with water. Add the maple syrup and raisins.
3. Cook over medium heat, stirring occasionally for 10 minutes.
4. Add lemon juice and cinnamon. Cook for another 10 minutes, until soft.
5. While fruit is cooking, place chopped nuts in a dry skillet over medium heat and toast, stirring often, for 5 minutes.
6. Drizzle honey over the nuts and add ginger; stir to keep honey from burning until honey melts completely and nuts are coated.
7. Top warm fruit with toasted nuts and enjoy!

NOTE: Can also be used to top whole grain toaster waffles or pancakes for breakfast.
